Breakfast Mélange

with Fruit & Quinoa

Ingredients

  • ¼ cup water

  • 1 tsp. pure vanilla extract

  • 1 banana

  • 15 oz. frozen peaches

  • ½ tsp. cinnamon

  • ½ tsp. nutmeg

  • 1½ cup cooked quinoa

  • 1 cup milk (unsweetened coconut or almond)

    Optional: Add any fruit of your choosing after cooking (such as blueberries)

Directions

  • Place water and vanilla in a large saucepan over low heat.

  • Add bananas and peaches. Stir.

  • Add in cinnamon and nutmeg. Bring to a simmer.

  • Reduce heat and cook until tender, about 7 minutes.

  • Stir in quinoa and milk.

  • Cook on low for 5-10 minutes. Serve warm.
